Tahini cookies

Do you guys use tahini? I am obsessed with it! It is so versatile and so good. It’s got subtle flavour that can be used for both sweet and savoury - I sometimes put it on a toast with a bit of maple syrup over it, I make salad dressings with it, put it in baking.. It is obvious that tahini is a must in our food cupboard :)

These cookies are inspired by Honey&Co.

Ingredients

250g all purpose flour
180g caster sugar
70g applesauce
50g oil
110g tahini
1tbsp ground flaxseeds
1/2tsp salt
1/2tsp baking soda
1/2tsp baking powder
Sesame seeds (black or white or both)

Method

  1. Mix flaxseeds with 3 tbsp water and set aside for about 10 minutes. Preheat oven to 190C/fan 170C and line two baking sheets.

  2. Place sugar, applesauce, oil, flaxseed egg and tahini into a bowl and combine together.

  3. Sieve flour, baking soda, baking powder and salt and add to the bowl. Mix until combined.

  4. Create small balls from dough (around 50g) and cover them with sesame seeds. Place them on baking sheets but give them a bit of space, they will grow a bit.

  5. Bake for 12-14 minutes and in the middle of baking (around 7 minutes) take sheets from the oven and smash them a couple of times on a kitchen countertop - the cookies will spread a little bit better afterwards.
    Take them out of the oven and after few minutes transfer to a cooling rack.
