Granola bars

These are great for a quick breakfast (or snack) on the go. Or maybe now it’s more likely to eat it not on the go but in the middle of a zoom call with camera turned off..

They are completely without oil and refined sugar but still very nice nevertheless! Plus you can use whatever nuts and seeds you have at hand or whatever are your favourites.

makes 5 bars

Ingredients

1/2 cup oats
1/2 cup puffed rice
1/3 cup seeds (I used pumpkin, chia and flax seeds)
1/3 cup nuts (I used, almonds and walnuts)
1/4 cup peanut butter
2 large banana (or 11/2-2 small bananas)
pinch of salt

Method

  1. Line a loaf tin with a baking parchment and preheat the oven to 160C.

  2. Mash banana with a fork and mix with peanut butter. Add rest of the ingredients and combine well.

  3. Transfer to a tin, make it flat with a spatula (or a glass) and bake for 30 minutes.

Notes:

If you would prefer bars sweet, add 2-4tbsp of date syrup.
