Coconut meringue cookies

It is a tradition to bake 7 types of tiny cookies for Christmas in the Czech Republic and these coconut ones are among them usually. They are so nice yet so easy! And because I don’t believe they have to be necessarily just for Christmas, here is a recipe

Makes 27 cookies

Ingredients

9tbsp aquafaba
180g icing sugar
180g desiccated coconut
pinch of cream of tartar

Method

  1. Place aquafaba and cream of tartar into a bowl of an electric mixer and beat aquafaba until soft peaks form.

  2. Start to add the sugar (preferebly sieve the sugar) a little at a time until it is thick and shiny - it takes some time, around 10 minutes so be patient.

  3. Meanwhile preheat oven to 120C and line two baking sheets with baking parchment.

  4. Gently fold coconut into whipped aquafaba. Spoon the mixture on baking sheets (I made one cookie with one tablespoon) or you can pipe it if you fancy.

  5. Bake for 40-45 minutes.
