Chickpea stew with sweet paprika

This is one of the easiest and quickest recipe ever! You probably have all the ingredients in the cupboard so in 30mins you can serve dinner.

Serves 4

Ingredients

1 medium onion, diced
2 cans of chickpeas (rinsed and dried)
1 leek (sliced)
1tbsp sweet paprika
500ml vegetable broth
100ml soy cream
4tsp lemon juice
1tbsp oil
1tsp salt
rice to serve

Method

  1. In a large pot heat up oil and cook onions until translucent - around 5 minutes. Add sweet paprika and cook for 1 minute (don’t leave it for longer than that, otherwise it will go bitter) and pour in vegetable broth. Add 1/2 chickpeas and blend with hand blender until smooth.

  2. Add the rest of chickpeas and leek to the pot and bring to the boil, season with salt and cook until leek is soft - around 10 mins.

  3. Add soy cream, lemon juice and taste to season.

  4. Serve with rice or even with pasta/toast/…)

Notes:

Add more soy cream if you want it slightly creamier, it can only make it better.
