Vegan White Hot Chocolate

What is better than having hot chocolate on a cold winter day? Having white hot chocolate! Obviously vegan white hot chocolate. This ultimate comfort drink is rich, delicious and easily made just with few ingredients (spoiler alert - none of them is vegan white chocolate).

This is one of the recipes you didn’t know you needed but you will love it! I personally love white chocolate but it is quite sweet it so I don’t feel like making a cup of hot chocolate from it. However I don’t mean to be horrible about sugar, I love everything sweet but within limits - it just doesn't make me feel that good if I have something very sweet and rich. I don’t even drink classic hot chocolate that much to be honest - if I do, then only my recipe - half chocolate, half cocoa.

Anyway, enough chatting - this white hot chocolate is smooth, kind of rich (in a good way) and so delicious! The best thing in my opinion is that you know what you’re putting inside and it’s all good stuff.

What ingredients do you need?

CACAO BUTTER - gives it that chocolate taste. I know that cacao butter is a bit expensive but you only use a tiny bit of it for this hot chocolate. Besides, you can use it to make your own bar of chocolate - sounds great, doesn’t it?

CASHEW BUTTER - I was looking for something to make this hot chocolate a bit creamier and cashew butter works great! It doesn’t give it any taste which is in this case a plus. If you don’t have it, maybe try almond butter.

NON DAIRY MILK - I think the best would be oat, soy, pea milk or any kind that is not that watery. I wouldn’t personally use almond or rice milk just because I want the creamier consistency but if those are your favourite, feel free to use them.

MAPLE SYRUP - was my personal favourite but you can use any other syrup you have. Even just sugar will work! That said, it might influence the taste a bit, so you know.

Tips and tricks on how to make the best hot chocolate

Definitely use blender. If you don’t blend the mixture, you’ll get oil patches on top of it. I also think that blending it makes it fluffier.

Use thick non dairy milk. I personally would avoid almond and rice milk, because they are quite watery. To be honest, the best result would be with coconut milk (for the creamy texture, imagine!) but that one comes with strong flavour..

Ingredients

for one (small) cup

200 ml non-dairy milk (you can use any kind but I think you’ll get the best result with milks that are not as watery - therefore I would avoid rice or almond milk)
5 g cacao butter
1 tsp cashew butter
1 tsp maple syrup (or golden syrup)
1/4 tsp vanilla extract

Method

  1. Place all ingredients in a small saucepan and heat up over medium heat until it almost reaches boil. Whisk few times so everything is combined.

  2. Pour into a standing mixer (or leave in a saucepan) and blend until everything seems well combined and you can’t see any oil (this depends on how powerful your blender is).

  3. Use more maple syrup if you think it is needed, pour into a mug and enjoy!
