I know, I know, granola has this reputation as something that looks healthy and is promoted to be healthy but it is actually not. Well, it is true, there is no way around it - granola can’t be that healthy. But I believe that once in a while to have granola for breakfast doesn’t hurt and if it is homemade one, even better.

When you make granola, you don’t need to measure your ingredients, it is very forgiving. You can also replace any ingredient, just keep it similar amount.

What Ingredients do you need to Make Crunchy granola?

OATS - use rolled oats (make sure they are gluten free if you need GF). You can also use rye flakes, spelt flakes,.. whatever you fancy.

PUFFED RICE - I like to add puffed rice into granola or granola bars, it tastes great. If you don’t have it, either use anything else puffed (wheat, spelt,..) or just replace it with the same amount of oats.

TAHINI - I usually use this one purely because I prefer the taste of it. It is also quite thin so if you are using another brand, it might be thicker but don’t worry, it won’t cause an issue.

AGAVE SYRUP - I decided to use agave syrup because it tastes very similar to honey. But any kind of sweet syrup will be good, especially maple syrup or date syrup (because dates and tahini taste amazing together).

NUTS & SEEDS - use any kind of your favourite nuts (or whichever you have at home). Granola is very forgiving, so use just those measurements and it will be fine.

OPTIONALLY ADD some chocolate chips, cacao nibs or dried fruit. You can add cacao nibs before baking but chocolate chips and dried fruit add after cooling down the granola.

Tips

Don’t bake granola for too long - it might seem too light in colour after 25 minutes but it will still continue to bake after you take it out of the oven and if it’s there for too long, it might be overbaked.

You can double the ingredients for more granola. I only make quite small amount because I only like to have it few times so I don’t want to waste it afterwards.

Makes 1 baking sheet

Ingredients

1 cup rolled oats
1/3 cup seeds (I used mixture of sunflower and sesame)
1/2 cup nuts (I used mixture of walnuts, almonds and macadamia nuts) - roughly chopped
1/2 cup puffed rice
1/3 cup tahini
1/3 cup agave syrup
1 tbsp coconut oil (melted)
1/2 tsp salt
optional: cacao nibs, chocolate chips, dried fruit,…

Method

  1. Heat oven to 150C/130C fan and line one baking sheet with baking parchment.

  2. Mix tahini, agave syrup and coconut oil in a bigger bowl. Add all the remaining ingredients (except for chocolate chips if you want to use them) and mix well.

  3. Spread granola on the baking sheet into an even layer. Bake for 10 mins, then stir and continue baking for another 10-15mins - until golden brown. The granola will continue to bake even after you take it out of the oven so don’t let it there for too long.

  4. Let it cool down completely, add chocolate chips if you feel like it and transfer to an airtight jar.
