SPRING POTATO SALAD

I personally love when new potatoes are ready in spring. What to do with those potatoes you may ask? Make the best spring salad - new potato salad with other seasonal ingredients - watercress (or rocket), radishes and easy vinaigrette! In my opinion this is one of the best recipe for potatoes.

Lockdown is slowly lifting up here in the UK, yay! We can meet outside with more than one person from another household, which is amazing. The weather is not that warm though but it is sunny most of the days so it means that lots of people wear shorts and summer clothes already. I don’t though, I am too still too cold but I am ready for all those barbecues with the best side dish - spring potato salad. It is easy (even if you just started to cook) and utterly delicious! (Delicious in that way that I ate the whole bowl of it after the photoshoot..)

My grandad used to grow his own vegetables - enough for the whole family. Which sounds great, right? However I used to dislike it - for me it meant that on weekends I had to help with it which I didn’t enjoy that much (unless it was picking up strawberries). But now I really miss it. My grandad still grows some vegetables but not that much anymore and besides I live too far (although whenever I go to see them around September/October my grandma tries to put squash into my suitcase, haha). Anyway, if I lived closer, I could make this whole salad (except for the vinaigrette) from home grown vegetables, which would be amazing. But for the time being, I’ll have to go to buy them in supermarket.

What ingredients to use?

Potatoes - use preferably new potatoes - those tiny cute potatoes that have just been pulled out from soil. I usually just wash them thoroughly, I don’t peel them.

Rocket or watercress - it is great with either - depends on your preferences. If you find watercress though, try it! It is great and I feel like it is underrated.

Olive oil - in this case, I used high quality one but! You could also try different kind of oils, like seed and nut oils that are not good to cook with (heating them up).

Red wine vinegar - you can replace it with white wine vinegar if you fancy, just add another teaspoon (or according to your taste) - red wine vinegar is stronger than white wine vinegar.

Ingredients

500g new potatoes
100g radishes (cut in quarters)
handful of rocket or watercress
4 tbsp olive oil
2 tsp red wine vinegar
1 tsp dijon mustard
salt
black pepper
optional: red onion or shallot (finely chopped)

Method

  1. Wash potatoes (preferably with a scourer), cut them in half (or quarters, depends on the size) and boil them in a small saucepan filled with salt water until tender - for 15-20 mins.

  2. Meanwhile whisk olive oil, vinegar and mustard - it will look like an emulsion. Season to your taste with salt and black pepper.

  3. Drain the potatoes and let them cool down completely. Mix it with radishes, rocket and drizzle with the dressing you prepared earlier.
