Baked Sweet Potato Fries with Coriander DIp

These sweet potato fries are a great snack or a side dish. They are fluffy on the inside and you don’t need to feel guilty about eating them - they are baked in the oven! They taste delicious together with this the coriander dip that has no cashews in it - but something way better.

Some days, when I feel hungry in the afternoon, I make sweet potato fries. I also like to make them when I feel a bit lazy and decide to have just a bought vegan burger patty. What I need with it is some kind of sauce - usually it is mayo - what is your favourite one? Anyway, this dip is much better and healthier. It is made with silken tofu - which gives you protein and its stuffed with the best herb - coriander. Now I know that my love for coriander is not exactly shared with lots of people (my boyfriend is one of them) but it is easily replaceable in this recipe (keep reading to find out with what).

I read lots of recipes where they recommend either soaking sweet potatoes before baking them or covering them in cornstarch. I tried soaking them but in my opinion it didn’t make so much difference and who has time for that? I mean, sure, I do, but I often forget about these hacks so I just don’t do it. We also once tried the cornstarch trick but we added too much of cornstarch and that wasn’t good.

What ingredients do you need?

SILKEN TOFU - is in my opinion such an underused ingredient. I honestly love to eat it just like that with soy sauce. But it also makes great substitute for vegan baking or dips - just like this one. I know that there are lots of cashew based dips but tofu dip is much better in my opinion!

CORIANDER - I know that coriander is controversial. So if you don’t like it, why not to use a different kind of herb? Parsley, basil, or chives! (that one I will have to try myself) or what about a mix of herbs?

Ingredients

Sweet Potato Fries

500 g sweet potatoes (around 2 bigger ones) - cut into 1 cm stripes (all should be equal in size)
2 tbsp olive oil
1 tsp salt
1 tbsp chopped coriander (optional)

Tofu Dip

150 g silken tofu
1/2 bunch coriander (smaller bunch)
1 clove of garlic - minced
2 tsp lemon juice (rice vinegar)
1/2 - 1 tsp salt

Method

  1. Preheat oven to 200C/180C and line one big or two smaller baking sheets with baking parchment.

  2. Add cut sweet potatoes into a large bowl, toss with olive oil, salt and chopped coriander. Make sure all potatoes are covered. Move onto baking sheet and spread around - give them a bit space, don’t overcrowd them. Bake for 30-35 mins - until they begin to brown, especially on the tips.

  3. Meanwhile make the tofu dip - mix silken tofu, coriander, garlic, lemon juice and salt in a food processor. Add more salt if you fancy and serve with warm sweet potato fries.
