Pan Fried Garam masala chickpeas with turmeric yogurt

What is better than roasted chickpeas? Pan fried chickpeas! These are crispy on the outside but creamy on the inside and they go perfectly with this spiced yogurt and pickled onions. Enjoy these as a part of your lunch, as a side dish or just as a snack.

I don’t know if I ever said it before, but whenever I need to prepare some lunch or dinner to celebrate, I much prefer to make lots side dishes and no main. Don’t get me wrong, we don’t celebrate or have people around a lot, haha. But it can be just a Friday night dinner with my boyfriend. For example for Christmas dinner last year, we had an asian theme - a sticky shiitake mushrooms, turnip cake, five spice seitan, soy braised soybeans and some rice. Just for the two of us, yes.

So I like to come up or find new recipes that can be a part of our dinner next time. This is one of those - it is easy, quick and you can make 2/3 of it ahead of time! You could also make the chickpeas ahead but I personally think they are better when they are fresh.. I love to serve it with flatbread - which you can either buy or make your own, which is surprisingly easy! I make this one - the best in my opinion.

This recipe is another one of my vegan versions of a meal by restaurant Caravan in London. It is one of our favourite places to go for brunch and their food is just delicious (and not just food, the staff is so nice too).

Ingredients

Pickled Onions (make at least an hour before serving)

1 medium red onion - sliced thinly
1/2 cup vinegar (either white wine or apple cider)
1/2 cup water
1 tsp salt
1 tsp sugar

Spiced Yogurt

200 g vegan yogurt (I used oat)
1/2 tsp turmeric
1 tsp garam masala
1/2 - 1 tsp salt (to taste)
1 tsp lemon juice

Pan Fried Chickpeas

2 tbsp oil
1 tin of chickpeas (drained, rinsed and patted dry)
2 tsp garam masala
1 tsp salt

flatbread to serve with

Method

  1. Put onions into a clean jar/bowl. In a small saucepan bring vinegar and water to simmer. Add salt and sugar and let it dissolve. Pour the liquid over onions and set it aside.

  2. Mix all the ingredients for spiced yogurt and set aside.

  3. Heat up oil in a large pan (or if your pan is not big enough, make it in two batches), add chickpeas together with garam masala and salt, mix well so all chickpeas are covered and cook for 8-10 mins on a medium heat. Stir it few times.

  4. Spoon yogurt into a shallow bowl, add chickpeas and serve with flatbread and pickled onions.
