Broiled White Cabbage with Tahini Sauce

Cabbage, especially white cabbage, is an underrated vegetable in my opinion. But you can create such delicious dishes with it - and this is one of them. My favourite dinner to make is actually lots of side dishes. It can take more time and more preparations so I usually do it just on special occasions but it is so worth it! Next time I decide to do that, this one will definitely be on the list. But it won’t be just then because honestly, this dish is actually quite quick and quite cheap (white cabbage is usually quite cheap and the best - it lasts so long).

This dish is inspired by a restaurant in West London where they have similar dish with black tahini sauce.

What ingredients do you need?

White cabbage - the main star! Use a smaller head or just a half of a bigger one, it will be enough.

Almond flakes - or you can use whole almonds. Roasted almonds make everything better. It’s always nice to add something crunchy to a salad or anything really.

Tahini - try to find the best quality tahini - those not as good ones are bitter. I like to use Belazu - that one is quite runny so in case your tahini is thicker, you might need to add a bit more water. And be sure to mix tahini before using it, there will be oil separated on top probably.

Cajun spice - it makes the tahini sauce so good and it goes really well with the cabbage. If you don’t like spicy food that much, try just one tablespoon at first and taste.

Serves 4 as a side dish

Ingredients

20 g almond flakes (or whole almonds)
1 head white cabbage (small one or just half of bigger one)
2 tsp olive oil
1 garlic clove (sliced)
1/4 cup tahini
1/4 cup cold water
2 tsp lemon juice
2 tsp cajun spice
salt

Method

  1. In a medium pan, dry roast almonds over medium heat for about 5 minutes.

  2. In a large saucepan bring about 2 litres of water (with 1 tsp salt) to the boil.

  3. Meanwhile cut cabbage in half, then cut out the core and cut cabbage into bigger pieces - around 4 cm big.

  4. Move cabbage to the saucepan and cook for 3 mins. Remove cabbage from water and cool down - either under running cold water or in a bowl filled with water and few ice cubes.

  5. Turn broiler in your oven on (the highest point). Dry cabbage, toss it with olive oil and garlic and move it on a roasting tin. Place the tin on the highest place in your oven and broil for 5-8 mins. Be careful not to overdo it so check it few times - every oven is a bit different.

  6. Meanwhile make the sauce - mix tahini, cold water, lemon juice, cajun spice and salt (to your taste).

  7. Serve cabbage with sauce over it and sprinkle with roasted almonds.
