Poppy seeds pancakes

It is a pancake day and I’m ready with these poppy seeds pancakes!
I’ll be honest - there aren’t that many days when I want to eat pancakes, but sometimes it’s just the right thing to have 😊 I like to keep it simple with just maple syrup, bit of yogurt and berries, what are your favourite toppings? Let me know in the comments!

Makes 12 pancakes

Ingredients

200ml milk
1 banana
80g ground poppy seeds
160g all purpose flour (for GF use buckwheat flour)
1tsp baking powder
1/2tsp baking soda
2tsp lemon juice
pinch of salt
vegetable oil for cooking

Method

  1. Mash banana in a bowl with a fork (or with a blender), add milk, ground poppy seeds and lemon juice and mix together.

  2. In another bowl sift flour, baking powder and baking soda, add salt and whisk.

  3. Add all the wet ingredients into the bowl with flour and whisk in - it should have a thick consistency (spoonable) - you might need to add a tablespoon of milk, you’ll see.

  4. Heat up a frying pan on a medium heat, add a bit of oil (around 1/2tsp), brush it around with a silicone brush and add around 4tbps of batter per pancake (this is completely up to you, whatever size of your pancakes you want). Cook about for 2-3 mins - until brown, then flip and cook for 1-2mins.

  5. I usually keep them in our oven that can be preheated to keeping food warm and then serve them with maple syrup, some yoghurt on top and berries.

Notes:

If you have a Polish shop near by, they will most likely have ground poppy seeds. Otherwise you can grind them in a coffee grinder or apparently a blender (although I have never tried blender).
