Parkin cookies

It was raining all day here in London and tomorrow is not supposed to be any better so I feel like drinking lots of coffee and tea, reading books, watching studio ghibli films (have you seen any?) and eating nice cookies - like these parkin ones! They’re oat cookies with a hint of molasses and ginger.

Makes 12 cookies

Ingredients

180g all purpose flour
150g oats*
100g caster sugar (preferable golden)
75g applesauce
45g vegetable oil
1/2tsp baking soda
4tbsp molasses
2tsp ginger*
1tbsp ground flax seeds

Method

  1. Preheat the oven to 180C/160C (fan) and mix flax seeds with 3tbsp water and let it sit for about 10 mins. Line two baking sheets with baking parchment.

  2. In a bowl mix flour, oats, baking soda and ginger.

  3. In another bowl mix sugar, applesauce, oil, molasses and flax seeds and then add it to the bowl with dry ingredients and mix it together until the liquid covers all the oat mixture.

  4. Shape the mixture into 12 balls with wet hands (or you can use a cookie scoop) - they should all be similar size (I make all of them around 50g) and put them on baking sheets with a bit of space, they will spread but only a little bit.

  5. Bake them for 18-20 mins (until they’re golden), leave to cool on the sheets for 10 mins and then transfer to a cooling rack.

Notes:

I used porridge oats but you can use jumbo oats as well (maybe blitz in a blender so they’re smaller).
If you don’t like ginger that much, use just 1tsp - the cookies won’t be that spicy.
