No bake granola bars

How often do you feel peckish or like snacking in between meals? I feel like that often πŸ˜… Especially now when I spend lots of time at home, it is very easy to snack on chocolate/cookies/crisps/… So I thought maybe these granola bars will solve that. They are so nice and you only need 10 minutes to make them. Easy peasy.

Ingredients

2/3 cup naked barley flakes*
1/3 cup puffed rice or quinoa
1/4 cup mixture cashew and macadamia nuts
1/4 cup mixture of sunflower and chia seeds
1/4 cup cocoa nibs
1/2 + 1/4 cup almond butter
5 tbsp date syrup
pinch of salt

Method

  1. Line a loaf tin with baking parchment (cut so it is longer on the sides - it will be easier to lift up and cut)

  2. In a larger bowl mix almond butter with date syrup and salt.

  3. Optional: If you don’t want big pieces of nuts, chop them roughly.

  4. Add rest of the ingredients to the bowl and combine well, until everything is coated.

  5. Transfer the mixture to the loaf tin, arrange it evenly and press down firmly (I use something flat, like a glass).

  6. Cover with a tin foil and let it rest in the fridge. You can eat them after about an hour but I would wait till the day after - flakes get a bit softer.

Notes:

I got barley flakes from Hodmedods but if you don’t have them, just use oats. And for cocoa nibs - you can use chocolate chips instead of those.
