Fig Salad

This delicious fig salad is the best side dish you could make in September, when figs are in season. It is quick and easy to make and it tastes amazingly paired with balsamic vinaigrette and garlic flakes.

Honestly, I am not sure whether this should be called a recipe. It is way too easy and quite intuitive but on the other hand, I know that I used to struggle a lot when I was younger and didn’t have any experience with cooking. Just as an example, when I wanted to make pasta I had to weight it and measure water for it.. And that’s perfectly fine, no one is born an expert in anything, right?

This salad makes such a good side dish. The combination of figs, balsamic and garlic is one of my favourite if I’m honest with you.. It just goes so well together! I used only rocket for this recipe but you could use a round lettuce, mixture of leaves,… Up to you. I think that it is important to add something crunchy into a salad so one time I added flaked almonds that I pan fried on a dry pan, another time I added dried garlic flakes which is something that everyone should have at home - it makes dishes more interesting - salads, avocado on toast, bowls, roasted vegetables,… I buy them here. Figs season is short as we know so if you want to make this salad any time of the year, use dried figs.

Are figs vegan? I heard few times and now I also read about it - wasps crawl into figs where they lay their eggs and then die. Her body is afterwards digested and when hatched, the baby wasps crawl out of the fig. Figs wouldn’t be able to grow unless it was for this process - the baby wasps have pollen on their legs which then continues the cycle of fig life. So in my opinion, they are. Both wasps and figs need each other.

Ingredients

Balsamic Vinaigrette

3 tbsp olive oil
2 tsp balsamic vinegar
1 garlic clove (crushed)

100 g rocket (washed and dried)
4 figs (quartered) - fresh or dried
optional: flaked almonds (dry pan fried), garlic flakes

Method

  1. Mix ingredients for a vinaigrette - ideally in a small jar with a lid so you can shake it (it is the easiest way how to mix oil with something, trust me).

  2. Mix rocket with the vinaigrette in a bowl and then arrange on a bigger plate, put figs on top and sprinkle with almonds or garlic flakes. (I think that this salad is perfect for a plate presentation but of course you can serve it in a bowl).
